Authentic Fettucine Carbonara

When people say carbonara, we think of rich, creamy pasta. Also, the word fattening comes to mind because of the generous amounts of cream used. However, that version which many of us indulge in is not the authentic Italian recipe.


Authentic Italian carbonara does not use cream to bring about the creaminess but rather eggs. There is no cream involved hence making it a much healthier option. It tastes similar to the version with cream, if not better. Originally, it requires bacon or pancetta but since I didn't have any I improvised and instead used chicken bratwurst sausage.



I referred to this site, Pasta Carbonara, but I did not follow it strictly. I omitted the white wine and chicken stock. Basically, I used it more for its methods of cooking and it made my first time easier with the step-by-step pictures.
